Because Kubo wrote it all poetic and philosophical it became a bit confusing at first. But her bankai was literally just acid blood that melted Kenpachi, and Unohana just instantly healed him up, melted him, healed him, repeat. And because Kenpachi apparently was a Sayian he became stronger and stronger each "death".

剣八が強い敵と戦うほど強くなってたのは、無意識のリミッターを相手に応じて解いてたからという訳
It's not that he got stronger. Kenpachi doesn't get stronger. He was already stronger than Unohana as a brat, but started subconsciously nerfing himself so he could enjoy his fights more. Every time he fights a strong opponent who could push him to the edge, he unlocks more of his subconscious limiters.

一つ面白いのは、死神関連は鬼道も瞬歩も斬魄刀も全部０番隊が発明してる点で、西欧の霊界はそれに相当するような独自の何かがあるはずなんだ
you mean the western afterlife?
I imagine its sort of like the underworld in Disgaea where people reborn as 'demons' think tormenting the dead will let them be reborn free of sin faster, with a group of self-declared angels taking the place of 0 squad.

one thing interesting of note is how all the shinigami trapping, including kido and shunpo and zanpakuto and all that were invented by the 0 squad, so western afterlife would logically have its own distinct equivilents of those things fulfilling similar roles
